Shadow, the woods are chopped using the lumberjack skill. The higher your skill level, the greater the chance to lumber the higher end woods. Woods are random, not static like the ores, so one tree might give different types of wood each time you chop at it.
To craft with a certain type of wood, open your fletching tool, and down towards the lower left is a button titled LOGS. Click this, then select the type of wood you would like to use, in your case, Mohogany. Then select Weapons. There are two buttons next to each weapon, a button to make the item, and a button with a scroll on it. If you click the scroll button, it will show you what the ingredients are for your weapon and your success chance to make a regular weapon and an exceptional weapon.
I will leave it to the players to figure out what benefits each type of wood gives.
